Butterscotch Brownies

1cup brown sugar, or Scant (if using Sucanat, add 2 teaspoons water)
1/4 cup vegetable oil (or 3 tablespoons olive oil)
1 egg , 1 teaspoon vanilla, 3/4 cup flour, 1 teaspoon baking powder
1/2 teaspoon salt, 1/2 cup nuts, chopped (optional)
Mix together the first four ingredients. Then add remaining ingredients and mix well.
Spread into a greased 8x8 inch baking dish. Bake 350 degress for approximately 20 minutes.
do not overbake. You can double this for chewer brownies. ENJOY!
